  • unsalted butter 2 1/2 sticks
  • green onions, chopped - 12 item
  • green onion tops, minced - 3 Tbsp
  • cloves garlic, minced - 15 item
  • dry white wine - 2 c
  • lemon juice - 6 Tbsp
  • large shrimp unpeeled
  • fresh parsley, minced
  • Tabasco - 1 tsp
  • each: salt and pepper - 1/2 tsp
  • lemon wedges - 8 item

How to make barbecued garlic shrimp:

You will need 16 bamboo skewers, soaked in water for 30 minutes.

Melt butter in large heavy skillet over medium heat. Add green onions and garlic; saute for 3 minutes. Add white wine; simmer for 15 minutes, stirring occasionally. Mix in lemon juice; season with pepper. Transfer to large bowl; let cool. Cut shrimp down back through shell; do not peel. Remove veins. Add shrimp and parsley to garlic mixture; toss well. Cover and chill 6 hours, turning occasionally.

Prepare barbecue for grilling shrimp. Remove shrimp from marinade. Thread shrimp on skewers. Transfer marinade to saucepan. Simmer over medium heat until thick, stirring occasionally, about 12 minutes. Strain through sieve set over bowl, pressing on solids. Season marinade with pepper sauce and salt. Place shrimp on grill and cook until just pink and cooked through, turning once, about 3 minutes. Garnish with lemon wedges. Makes 8 servings.
