- each boxes yellow rice mix - 2 oz
- cider vinegar or fresh lime juice - 1/4 c
- medium-size bell peppers, cut in thin strips - 3 item
- medium-size cucumber, well scrubbed, halved lengthwise and thinly sliced - 1 item
- loosely packed cilantro, finely chopped - 1 c
- minced fresh or pickled jalapeno peppers optional - 1/4 c
