Ingredients/Components

  • salt - 1/2 tsp
  • flour - 1 c
  • baking powder - 1 tsp
  • chopped onion - 1/2 c
  • dash of pepper - 1 item
  • grated cheese - 1/2 c
  • oregano - 1/2 tsp
  • parsley - 2 Tbsp
  • eggs, slightly beaten - 4 item
  • shredded, unpeeled zucchini - 3 c
  • oil plus 2 Tbsp - 1/2 c

How to make zucchini appetizer:

Mix together all dry ingredients. Then add onions and zucchini. Mix. Add oil and eggs. Mix well and put in a greased 13 x 9 x 2-inch pan. Bake at 350° for 30 to 35 minutes.
