Zucchini relish
Ingredients/Components
- coarsely ground zucchini, including the peel - 10 c
- ground onions - 4 c
- large green peppers, chopped into small pieces - 2 item
- small red pepper, chopped into small pieces - 1 item
- canning salt - 5 Tbsp
- dark vinegar
- sugar - 6 c
- turmeric - 1 tsp
- celery seed - 2 tsp
- mustard dry - 1 Tbsp
- mustard seed - 2 Tbsp
- cornstarch - 2 Tbsp
How to make zucchini relish:
Combine the ground zucchini, peppers and onions. Add salt and let stand overnight. In the morning, drain and rinse with cold water. Let stand to drain while mixing together in a large cooking kettle the sugar, vinegar, spices and cornstarch. Mix well, then add zucchini, peppers and onions. Cook for 1/2 hour, stirring the mixture every so often. Put into hot jars and seal. This amount makes about 6 pints.Recipe categories: Squash, Condiments, etc., Zucchini.
