Ingredients/Components

  • coarsely ground zucchini, including the peel - 10 c
  • ground onions - 4 c
  • large green peppers, chopped into small pieces - 2 item
  • small red pepper, chopped into small pieces - 1 item
  • canning salt - 5 Tbsp
  • dark vinegar
  • sugar - 6 c
  • turmeric - 1 tsp
  • celery seed - 2 tsp
  • mustard dry - 1 Tbsp
  • mustard seed - 2 Tbsp
  • cornstarch - 2 Tbsp

How to make zucchini relish:

Combine the ground zucchini, peppers and onions. Add salt and let stand overnight. In the morning, drain and rinse with cold water. Let stand to drain while mixing together in a large cooking kettle the sugar, vinegar, spices and cornstarch. Mix well, then add zucchini, peppers and onions. Cook for 1/2 hour, stirring the mixture every so often. Put into hot jars and seal. This amount makes about 6 pints.
