Ingredients/Components
- biscuit mix - 1/3 c
- pepper - 1 item
- grated Parmesan cheese - 1/4 c
- eggs, slightly beaten - 2 item
- shredded zucchini - 2 c
- butter or margarine to fry patties - 1 item
How to make zucchini patties:
Mix the biscuit mix with the grated Parmesan cheese. Add a dash of pepper and the beaten eggs. Fold in the zucchini. Melt butter or margarine in skillet over medium heat. Use 2 tablespoons of batter for each patty and fry the patties, 4 at a time, until golden brown. Makes 12 patties.Recipe categories: Squash, Vegetables, Low Carb.
