Squash croquettes
Ingredients/Components
- sugar - 2 Tbsp
- eggs - 2 item
- flour - 2 Tbsp
- salt and pepper - 1 item
- stick oleo - 1/2 item
- large onion - 1 item
- large bell pepper - 1 item
- cooked yellow squash - 2 c
How to make squash croquettes:
Saute onion and pepper in oleo. Mix all ingredients (drain squash well). Form into balls about size of egg. (Will handle better if put in refrigerator until cold.) Roll in bread crumbs and fry in deep fat. Allow at least 2 to 3 per person.Recipe categories: Squash, Low fat, Vegetables.
