  • eggs - 2 item
  • flour - 1/4 c
  • salt and pepper to taste - 1 item
  • mayonnaise - 2 Tbsp
  • oregano - 1/4 tsp
  • Parmesan cheese, shredded - 1/4 c
  • grated unpeeled zucchini
  • grated green onion or 1/2 c - 2 Tbsp

How to make zucchini patties:

Mix together 1 1/2 cups grated unpeeled zucchini (dry between paper towels). Add onion, cheese, flour, eggs, mayonnaise and spices. Melt 1 teaspoon butter (or coat with oil) in a 10-inch skillet. Spoon 2 heaping tablespoons of batter for each patty. Flatten with spatula. Cook until brown on both sides. Serve plain or with tomato sauce or grated cheese.
