Chicken and dumplings
Ingredients/Components
- sugar - 2 tsp
- pkg - 1 oz
- milk - 2/3 c
- salt - 1 tsp
- flour - 1/2 c
- butter - 1/4 c
- pepper - 1/2 tsp
- chicken broth - 4 c
- basil - 1 tsp
- onion, chopped - 1/2 c
- garlic cloves, minced - 2 item
- celery, chopped - 1/2 c
- cubed cooked chicken - 4 c
- buttermilk biscuit mix - 2 c
How to make chicken and dumplings:
Dumplings:1 tsp. basil2 c. buttermilk biscuit mix2/3 c. milk In a large saucepan, saute onion, celery and garlic in butter until tender. Add flour, sugar, salt, basil, pepper and broth; bring to a boil. Cook and stir for 1 minute; reduce heat. Add peas and cook 5 minutes, stirring constantly. Add chicken. Pour into greased 13 x 9 x 2-inch pan.For dumplings, combine basil and biscuit mix. Stir in milk. Drop by tablespoonfuls onto casserole (12 dumplings). Bake, uncovered, at 350° for 30 minutes. Cover and bake 10 more minutes or until dumplings are done. Serves 6 to 8.
