Chicken and apricots
Ingredients/Components
- cinnamon - 1/2 tsp
- lemon juice - 2 Tbsp
- coarsely chopped onion - 1/2 c
- white wine or water - 1/4 c
- apricot preserves - 1/2 c
- lite salt optional - 1 tsp
- diced, dried apricots - 1/4 c
- chicken, skinned and cut-up - 1 item
- canned, pitted apricots, drained - 1 c
- whole dried cranberries or cherries - 1/2 c
- chopped or whole parsley for garnish - 1 item
How to make chicken and apricots:
In large nonstick skillet, combine chicken, onion and wine or water; mix in apricot preserves, cover and cook over medium-low heat for 20 to 25 minutes, stirring occasionally. Add the remaining ingredients and cook for 5 minutes, stirring occasionally, or until chicken is done. Garnish and serve.Recipe categories: Chicken, Main dish, Poultry.
