Ingredients/Components

  • flour - 4 Tbsp
  • can chicken broth - 1 item
  • olive oil - 4 Tbsp
  • sherry - 1/2 c
  • fresh mushrooms, sliced - 8 oz
  • cans artichoke hearts - 2 item
  • paprika and salt to taste - 1 item
  • chicken breasts 8 halves - 4 item
  • can black olives whole - 1 item

How to make chicken and artichoke casserole:

Remove chicken skin. Sprinkle with paprika and salt. Brown in 2 tablespoons olive oil. Place in casserole. Arrange artichoke hearts and black olives around them. Add broth. Brown mushrooms in 2 tablespoons oil. Sprinkle with flour. Add sherry. Bring to boil; simmer 1 minute. Pour over chicken. Bake at 350° for 60 minutes.

Pyrex baking dish size.
