Chicken and artichoke casserole
Ingredients/Components
- flour - 4 Tbsp
- can chicken broth - 1 item
- olive oil - 4 Tbsp
- sherry - 1/2 c
- fresh mushrooms, sliced - 8 oz
- cans artichoke hearts - 2 item
- paprika and salt to taste - 1 item
- chicken breasts 8 halves - 4 item
- can black olives whole - 1 item
How to make chicken and artichoke casserole:
Remove chicken skin. Sprinkle with paprika and salt. Brown in 2 tablespoons olive oil. Place in casserole. Arrange artichoke hearts and black olives around them. Add broth. Brown mushrooms in 2 tablespoons oil. Sprinkle with flour. Add sherry. Bring to boil; simmer 1 minute. Pour over chicken. Bake at 350° for 60 minutes.Pyrex baking dish size.
