Chicken rice casserole
Ingredients/Components
- sour cream - 3 Tbsp
- salt - 1 item
- water
- oleo - 1 Tbsp
- pepper - 1 item
- chopped onions - 1/2 c
- can milk - 3/4 item
- can cream of mushroom soup - 1 item
- rice - 1 c
- 3-inch chunk Velveeta cheese
- chicken breast boneless, skinned - 2 lb
How to make chicken rice casserole:
Cut chicken into strips (2 inches or so). Salt, pepper and flour breasts (first). Bring to boil water, rice, 1 tablespoon oleo and salt. Turn down to simmer and simmer 15 minutes, then do breasts. Brown them in 1/2 cup oleo. Remove from pan; saute onions. Add soup, milk and cheese. Cook until cheese melts. Add sour cream to soup mixture. Add cooked rice. Season to taste. Pour into greased 9 x 13-inch pan. Place chicken breast in rice mixture. Bake at 350° until hot and bubbly, about 30 minutes.Recipe categories: Chicken, Main dish, Casseroles.
