Spicy chicken and rice
Ingredients/Components
- cloves garlic, minced - 2 item
- frozen peas - 1 c
- hot pepper sauce - 1/4 tsp
- long grain rice uncooked - 3/4 c
- canned chicken broth
- dried basil leaves, crushed
- fresh basil for garnish - 1 item
- can unsalted stewed tomatoes, cut up - 1 oz
- each white chicken undrained - 2 cans
- sweet red pepper for garnish - 1 item
How to make spicy chicken and rice:
In saucepan, heat chicken broth, tomatoes, garlic and dried basil to boiling. Add rice; reduce heat to low. Cover; simmer 20 minutes. Add undrained chicken, peas and hot pepper sauce. Cover; simmer 5 minutes, stirring occasionally. Remove from heat. Let stand, covered, for 5 minutes. Garnish with basil leaves and pepper.
