Chicken athena



  • olive oil - 1 Tbsp
  • jar marinated artichoke hearts - 1 oz
  • rosemary, crushed - 1/4 tsp
  • onion, cut into chunks - 1 item
  • boneless chicken, skinned and cut into cubes - 1 lb
  • can Del Monte original recipe stewed tomatoes - 1 1/2
  • crumbled Feta cheese optional - 1/3 c

How to make chicken athena:

In skillet, brown meat in oil. Add onion and cook 2 minutes. Stir in tomatoes, marinade from artichokes and rosemary. Cook over medium heat 10 to 15 minutes or until thickened, stirring frequently. Stir in artichoke hearts. Heat through. Top with cheese. Garnish with chopped parsley, if desired. Serve with rice.
