Ingredients/Components

  • garlic powder - 1 tsp
  • Worcestershire sauce - 1/3 c
  • ground red pepper - 1/2 tsp
  • soy sauce - 1/3 c
  • seasoned salt - 2 tsp
  • black pepper - 1 tsp
  • onion powder - 1 tsp
  • deer, cut from hindquarter - 3 lb

How to make deer jerky:

Cut deer into 3/8-inch thick slices. Combine rest of ingredients in a small container. Stir until all of the spices have been dissolved. Place deer strips in shallow pan and pour marinade over them. Cover and refrigerate overnight, turning meat over once. Line bottom of oven with aluminum foil and lay strips on oven racks. If meat is too wet, pat with paper towels. Bake 6 to 8 hours at 150°. The longer they cook, the crisper they will get. Store in airtight containers. Will keep a long time.
