Ingredients/Components
- flour - 2 Tbsp
- chicken broth - 3 c
- salt and pepper to taste - 1 item
- stick oleo - 1/2 item
- sweet milk - 2 c
- eggs, boiled and peeled - 10 item
- pie crust, make ahead and chill - 1 item
- hen or large fryer, cooked and deboned - 1 item
How to make chicken pie:
Combine chicken broth, milk and oleo and bring to boil to melt oleo; thicken with the flour. Put layer of chicken in casserole dish, then layer of sliced boiled eggs and half the broth mixture. Top with crust that has been rolled out thin and bake at 400° until done and real brown. Repeat layer for the second time and again bake at 400°. I cut crust with glass, it makes it easier to spoon when serving. I also use a dish 10 x 12-inches, about 3-inches deepThis recipe is nearly 150 years old. Serves 10 to 12.
