Stacked enchiladas
Ingredients/Components
- milk - 1/2 c
- salt - 1/2 tsp
- flour - 1 Tbsp
- oil - 2 Tbsp
- ground beef - 2 c
- cheese - 1 c
- chopped tomatoes - 2 item
- onion, chopped fine - 1/2 c
- sliced olives - 1/2 c
- 6-inch tortillas - 8 item
- can chilies, chopped - 1 oz
How to make stacked enchiladas:
Brown beef with onion; blend in flour and milk. Stir and add chilies and salt. Stir constantly and add tomatoes. Keep warm. In separate skillet, heat oil; dip tortillas one by one in oil and drain on paper towels. Place a hot tortilla in a 9 x 9 x 2-inch baking pan; top with 1/4 cup beef and 2 tablespoons cheese. Layer remaining tortillas and mixture to make a stack. Bake at 350° for 20 minutes. Serves 4.Recipe categories: Main dish, Meat, Beans.
