Ingredients/Components

  • squirrels - 4 item
  • can whole kernel corn - 1 item
  • can hominy - 1 item
  • or 5 potatoes - 4 item
  • large onions - 2 item
  • rice - 1/2 c
  • cans tomatoes or tomato juice - 2 item
  • sliced bacon - 1 lb
  • bacon drippings - 1 item
  • hard-boiled eggs - 6 item
  • salt, pepper, garlic and chili pepper to taste - 1 item

How to make squirrel mulligan:

Boil squirrels until tender; debone. Add tomatoes, onions and seasonings and cook until vegetables are done. Cook rice separately. Fry bacon crisp and save drippings. Add corn, hominy and rice and bring to a boil. Stir in chopped bacon, bacon drippings and sliced eggs. The longer it cooks the better it tastes. Serve hot with cornbread.
