Ingredients/Components

  • margarine or butter - 3 Tbsp
  • chopped onion - 1 Tbsp
  • diced celery - 1/3 c
  • salt - 3/4 tsp
  • black pepper - 1/8 tsp
  • mustard dried - 1/2 tsp
  • Worcestershire sauce - 1/4 tsp
  • dash of cayenne pepper - 1 item
  • milk
  • crab meat - 1 lb
  • hard-boiled eggs - 2 item
  • grated onion - 1 tsp
  • parsley - 1/4 c
  • soft diced bread crusts removed - 3 4

How to make crab cakes:

Melt margarine; add onions and celery. Cook slowly for 5 minutes. Add salt, pepper, cayenne, mustard and Worcestershire sauce. Then add milk and diced bread. Cook slowly until thickened. Cool and let stand. In a large bowl, add hard-boiled eggs, crab meat, dash of salt, parsley and onion and mix. Then add to cooled bread mixture and refrigerate until cooled. Make balls and shape. Dip in flour, then egg and breadcrumbs. Fry in deep fat for 4 to 6 minutes.
