  • eggs - 6 item
  • pkg - 2 oz
  • grated Parmesan cheese - 1 c
  • poultry seasoning - 1 tsp
  • salt and freshly ground pepper - 1 item
  • large onion, grated - 1 item
  • herb stuffing mix - 2 c
  • butter, at room temperature - 3/4 c

How to make spinach balls:

Preheat oven to 350°. Beat eggs lightly in large bowl. Add remaining ingredients and blend well. Roll into walnut sized balls. Transfer to baking sheet. Bake until golden, about 20 minutes. Serve hot.

These can be partially baked for 10 minutes, cooled and frozen. Reheat thawed balls in a 350° oven for about 10 to 15 minutes. Makes 6 dozen.
