Ingredients/Components

  • salt and pepper to taste - 1 item
  • green pepper, diced - 1 item
  • carrots, sliced - 2 item
  • can tomatoes - 1 lb
  • beef stock - 8 c
  • dried lentils - 1 lb
  • ham bone - 1 item
  • tarragon vinegar - 2 Tbsp
  • slices bacon - 6 item
  • large onions, diced - 2 item

How to make lentil soup:

Soak lentils overnight. Drain and rinse. Combine lentils, stock and ham bone in large pot. Simmer 1 hour. Fry bacon; drain and crumble. Cook carrots, green pepper and onions in bacon fat until soft; add to soup with tomatoes, salt, pepper and vinegar. Simmer 2 hours. Remove bone. Top soup with crumbled bacon. (I usually eat this before the soup is done!)
