Ingredients/Components

  • cinnamon - 1 tsp
  • eggs - 3 item
  • vanilla
  • all-purpose flour, sifted - 3 c
  • salt - 1 tsp
  • baking soda - 1 tsp
  • vegetable oil
  • can crushed pineapple with juice - 1 oz
  • diced bananas - 2 c
  • to 3 drops yellow food coloring - 2 item
  • butter rum flavoring - 2 tsp
  • Add the diced bananas to the dry ingredients along with the oil, crushed pineapple with its juice, vanilla and eggs
  • half and half to reach desired consistency - 1 item

How to make hummingbird cake:

Stir together flour, baking soda, cinnamon, sugar and salt. Add the diced bananas to the dry ingredients along with the oil, crushed pineapple with its juice, vanilla and eggs. Stir to blend, but do not beat. Pour into greased Bundt pan and bake in preheated oven at 350° for 1 hour and 10 minutes or until cake tests done. When cooled, remove and drizzle with Butter Rum Icing or frost as desired.Butter Rum Icing:2 c. powdered sugar, sifted2 tsp. butter rum flavoring half and half (to reach desired consistency)2 to 3 drops yellow food coloring Mix all ingredients in a bowl, adding half and half until desired consistency is reached. Drizzle over cooled cake.
