Molasses cookies

Ingredients/Components

sugar - 1 c
cinnamon - 1 tsp
flour
nutmeg - 1 tsp
soda - 2 tsp
molasses - 1 c
ginger - 1 tsp
eggs, lightly beaten - 3 item
hot water - 2 Tbsp
lard or shortening - 1 c

How to make molasses cookies:

Mix all ingredients except the flour together. Then add the flour to make a stiff dough. Place part of the dough on a lightly floured pastry cloth. Knead dough to desired consistency. Roll out about 1/8-inch thick. Cut with cookie cutter. Place on floured cookie sheet in a 325° oven until firm. Remove from sheet to wire rack immediately. Stores well in airtight container or in freezer.
