Ingredients/Components

  • chopped dried apricots - 2/3 c
  • water - 2/3 c
  • apricot preserves - 1/2 c
  • sugar - 1 Tbsp
  • vanilla - 1/2 tsp
  • butter flavored Crisco - 3/4 c
  • butter - 1/4 c
  • packed brown sugar
  • flour
  • oats not instant
  • baking powder - 1 tsp
  • salt - 1/2 tsp

How to make apricot oatmeal bars:

Combine apricots and water in covered pan. Cook over medium heat about 10 minutes. Remove cover and cook until water has all evaporated. Add preserves, sugar and vanilla. Stir until preserves melt. Cool to room temperature.

Heat oven to 350°. Combine Crisco, butter, brown sugar, flour, oats, baking powder and salt in a large bowl. Mix at low speed until well blended and crumbly. Press half of the mixture in bottom of ungreased 13 x 9 x 2-inch pan. Spread filling evenly over crust. Sprinkle remaining mixture over filling. Press down gently. Bake at 350° about 30 minutes until crust is golden. Cool slightly. Loosen with spatula. Cut into 2 x 1 1/2-inch bars. Cool on rack.
