Sweet potato pie
Ingredients/Components
- cinnamon - 1/2 tsp
- granulated sugar
- vanilla extract - 1 tsp
- nutmeg - 1/4 tsp
- melted margarine - 1/2 c
- allspice - 1/4 tsp
- large sweet potatoes - 2 item
- large eggs, beaten - 3 item
- pie crusts unbaked - 2 item
- brown sugar plus extra to sprinkle on pies - 1/2 c
- half and half or evaporated skim milk - 1 c
How to make sweet potato pie:
Heat oven to 350°. Wash sweet potatoes; pat dry. Brush a little oil on them. Pierce a few times on each side. Bake until done, about 1 1/2 to 2 hours. Once done, peel and mash, making sure there are no lumps remaining.Combine potatoes with margarine, sugars, cinnamon, nutmeg, allspice, eggs, vanilla and milk; beat until smooth. Adjust seasoning to taste. Spread mixture in pie crusts. Place in a 350° oven. After 30 minutes, sprinkle 1 teaspoon of brown sugar on top of each pie. Bake for another 30 minutes. Makes 2 pies, 8 servings each.
