Surprise cookies
Ingredients/Components
- sugar - 2 c
- butter - 1 c
- eggs - 2 item
- milk - 1 c
- cream of tartar
- baking soda
- vanilla - 2 tsp
- flour added a little at a time; may need more for rolling - 4 c
- chopped dates
- flour - 2 tsp
- cold water - 1 c
How to make surprise cookies:
Filling:2 c. chopped dates1 c. sugar2 tsp. flour1 c. cold water Bring to a boil and cook until dates are softened and mash easily. Remove from heat and cool.Place about 1/4 of the dough on a floured pastry cloth. Knead some flour into desired consistency for rolling. Roll dough to about 1/8-inch thick. Cut with cookie cutters. Place on lightly floured cookie sheet. Add a small amount of filling to the cookie and place the same shape on top. Do not press dough down. Bake in a 325° oven until cookie is lightly browned. Remove from sheet immediately and cool on wire rack. Stores well in freezer.
