Ingredients/Components
- all-purpose flour - 3 c
- baking soda - 1 tsp
- cinnamon - 1 tsp
- firm not hard sliced bananas - 2 c
- vanilla - 1/2 tsp
- salt - 1 tsp
- sugar - 2 c
- eggs, slightly beaten - 3 item
- butter flavored oil
- chopped pecans - 1 c
- can crushed pineapple undrained - 8 oz
- Sift flour, sugar, soda, salt and cinnamon in electric mixer on "blend" speed; add eggs, bananas, oil, vanilla, nuts and pineapple
- butter room temperature - 1/2 c
- confectioners sugar - 1 lb
How to make hummingbird cake:
Preheat oven to 350°. Sift flour, sugar, soda, salt and cinnamon in electric mixer on "blend" speed; add eggs, bananas, oil, vanilla, nuts and pineapple. Bake in two 10-inch layer cake pans 1 hour and 20 minutes. Cool and frost.Frosting for Hummingbird Cake:1 (8 oz.) cream cheese, softened1 tsp. vanilla1/2 c. butter (room temperature)1 lb. confectioners sugar Beat all together with mixer and spread on cool cake; sprinkle with chopped pecans.Recipe categories: Desserts, Cakes, < 60 mins.
