Candied sweet potatoes
Ingredients/Components
- butter or margarine - 2 Tbsp
- light brown sugar - 1/2 c
- ground cinnamon - 1/4 tsp
- grated orange rind - 1/2 tsp
- cans sweet potatoes, in heavy syrup - 2 oz
How to make candied sweet potatoes:
Drain sweet potatoes, reserving 1/4 cup syrup. In large skillet, heat brown sugar, butter, orange rind, cinnamon and reserved syrup to boiling. Reduce heat and simmer until slightly thickened, about 1 minute. Add sweet potatoes, heat through, gently stirring, to coat with glaze. Makes 6 servings.To Microwave: Drain sweet potatoes, reserving 1/4 cup syrup. In 2-quart microwave-safe dish, place brown sugar, butter, orange rind, cinnamon and syrup. Cook at High for 4 minutes, until mixture is slightly thickened. Add potatoes, gently stirring, to coat with glaze. Cook at High for 1 minute, until heated through.
