Sweet potato balls
Ingredients/Components
- milk - 2 Tbsp
- butter or margarine - 1/4 c
- salt - 1/4 tsp
- light brown sugar - 3/4 c
- grated orange rind - 1/2 1
- cooked sweet potatoes - 3 c
- regular size marshmallows - 8 item
- crushed cornflakes or ground pecans - 1 c
How to make sweet potato balls:
Mash sweet potatoes. Add butter, sugar, milk, salt and orange rind. Scoop up 1/4 cup potato mixture and shape around each marshmallow (one tablespoon). Use more if necessary to cover. Roll each ball in crushed corn flakes or pecans. Place on buttered baking dish; cover with foil and freeze.When ready to serve, remove balls from freezer, straight to pan and into oven. Bake 20 minutes at 350°.
