- butter or margarine - 1 Tbsp
- salt - 1 item
- butter or margarine, melted - 1 Tbsp
- pepper - 1 item
- hot mashed potatoes - 2 c
- beaten egg yolk - 1 item
How to make duchess potatoes:
To mashed potatoes, add 1 tablespoon butter or margarine, the beaten egg yolk and salt and pepper to taste; mix well. Push mounds of potato mixture from large spoon onto greased baking sheet. Drizzle with 1 tablespoon melted butter or margarine. Bake at 450° for 10 to 12 minutes. Makes 4 to 6 servings.Recipe categories: Side dish, Potato, Vegetables.
