Sweet potato souffle



  • sugar - 1/2 c
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • chopped pecans - 1/4 c
  • flour
  • brown sugar - 3 Tbsp
  • evaporated milk
  • egg whites - 2 item
  • raisins - 1/4 c
  • margarine - 1 tsp
  • orange juice - 1/2 c
  • medium sweet potatoes - 5 item

How to make sweet potato souffle:

Topping:3 Tbsp. flour3 Tbsp. brown sugar1 tsp. margarine1/4 c. chopped pecans Steam or bake potatoes in skins. When done, remove skins and mash. Add sugar, cinnamon, vanilla and margarine. Mix together slightly beaten egg whites, orange juice and milk, then add in potatoes. Stir in raisins. Place in a casserole dish coated with vegetable spray. Mix topping mixture together and spread over top of mixture. Bake uncovered at 350° for 45 minutes. Yields 8 servings.
