Ingredients/Components
- salt - 1/2 tsp
- flour - 1/3 c
- baking powder - 1 tsp
- egg, beaten - 1 item
- corn meal - 1/3 c
- yellow squash, sliced - 3/4 1
- medium onion, chopped fine or grated - 1 item
How to make yellow squash puffs:
Cook squash, covered, 10 to 15 minutes until tender. Drain well. Mash enough squash to measure 1 cup. Combine squash and egg; stir well. Combine flour, meal, baking powder and salt; stir well. Add squash mixture and onion; stir until blended. Drop by level tablespoonfuls into hot oil (about 1 1/2 inches) in large skillet.
