Ingredients/Components
- sugar - 1 Tbsp
- milk - 1/2 c
- salt - 1 tsp
- flour - 1 Tbsp
- butter - 1 Tbsp
- water - 2 c
- baking powder
- stick butter - 1/2 item
- egg, beaten - 1 item
- chili powder - 1 Tbsp
- ground beef - 1 lb
- black pepper - 1/2 tsp
- green pepper, chopped - 1/2 c
- large onion, chopped - 1 item
- corn meal
- can tomatoes or Ro-Tel tomatoes - 1 item
- fresh or canned corn, drained - 1 c
How to make cornbread pie:
Topping:3/4 c. corn meal1/2 tsp. salt1 1/2 tsp. baking powder1/2 c. milk1 Tbsp. flour1 Tbsp. sugar1 egg, beaten1 Tbsp. butter Saute onions and peppers in skillet in 1/2 stick butter. Remove and saute the ground beef until gray looking. Combine the two mixtures and add tomatoes, water, corn and seasoning. Mix well. Simmer for 20 minutes. Pour into a buttered oblong dish, filling about 3/4 full. Mix ingredients of topping, then pour over mixture in dish.
