Rhubarb crisp
Ingredients/Components
- granulated sugar - 1/2 c
- flour - 1 c
- brown sugar - 1 c
- soft butter - 1/4 lb
- lemon juice - 2 Tbsp
- grated lemon rind - 1/2 tsp
- fresh rhubarb, cleaned and cut into 1/2-inch pieces - 4 c
How to make rhubarb crisp:
Mix rhubarb, granulated sugar and lemon juice and rind. Spread in bottom of 8-inch square glass dish. Mix together brown sugar, flour and butter until crumbly. Sprinkle on top of rhubarb. Bake in microwave for about 15 minutes, turning dish 90 degrees every 4 minutes. Test center of crisp with fork. If rhubarb is tender, remove from microwave. Serve warm or cold with whipped cream or vanilla ice cream (or nothing if you prefer).Recipe categories: Pie, Pies and tarts, Cobblers and crisps.
