Potato soup
Ingredients/Components
- butter - 2 Tbsp
- light cream - 1 c
- chicken broth - 4 c
- salt and pepper to taste - 1 item
- large onion, chopped - 1 item
- diced raw potatoes - 4 c
- large carrot, chopped - 1 item
- chopped fresh dill for garnish; optional - 2 Tbsp
How to make potato soup:
Melt butter in a large pan. Add onion, potato and carrot. Cover and cook over low heat for 5 to 10 minutes. Add broth, salt and pepper; simmer until vegetables are tender. Remove from heat. Puree half the mixture in a blender or mash, then return pureed soup to pan. Stir in cream. If desired, garnish each bowl with dill.Recipe categories: Potato, Vegetables, Soups & stews.
