Mushroom soup
Ingredients/Components
- flour - 4 Tbsp
- butter - 3 Tbsp
- light cream - 1 pt
- chicken broth - 1 qt
- salt and pepper to taste - 1 item
- fresh mushrooms - 1 lb
- medium onions, chopped - 2 item
- Add flour until smooth
How to make mushroom soup:
Brown onions in butter until tender. Add flour until smooth. Slowly add chicken broth. I usually add about 1/4 of chicken broth at a time, letting it simmer between additions. Add mushrooms and cream; simmer for about 1/2 hour, or until mushrooms are tender. Do not let mixture boil.Substitutions: One pound oysters can be used in place of mushrooms.If you like the flavor of bacon, chop 1/2 pound. Let it brown nice and crisp; use in place of butter.
If you like the flavor of celery, add 1 or 2 stalks, finely chopped, the same time you add the onion.
