Gourmet cheese potatoes
Ingredients/Components
- butter - 1/4 c
- medium potatoes - 6 item
- shredded cheese Velveeta - 2 c
- finely chopped onion optional - 1/3 c
- sour cream or 1 c
How to make gourmet cheese potatoes:
Cook potatoes in skins; peel and shred coarsely. In a saucepan over low heat, combine cheese and 1/4 cup butter. Stir until almost melted. Remove from heat and blend in sour cream or milk, onion and seasonings. Fold into potatoes and turn into greased 2-quart casserole. "Dot with 2 tablespoons of butter and sprinkle with paprika. Bake for 30 minutes or until heated thoroughly in 350° oven. Casserole may be prepared a day before; wait to sprinkle with paprika until ready to bake.
