- egg - 1 item
- Crisco - 1 Tbsp
- garlic powder - 1/4 tsp
- dried basil - 1/4 tsp
- dry bread crumbs - 1 c
- Parmesan
- peeled eggplant - 1 item
- pepper and cayenne - 1/8 tsp
How to make oven-fried eggplant:
Heat oven to 375°. Slice eggplant in 1/2-inch slices. Beat egg. In bowl (flat bottom), combine crumbs and seasonings. Dip slices in egg, then in crumb mixture. Place on preheated cookie sheet that has been greased with 1 tablespoon Crisco. Continue coating slices and adding to hot cookie sheet.
