Oven-fried eggplant



  • egg - 1 item
  • Crisco - 1 Tbsp
  • garlic powder - 1/4 tsp
  • dried basil - 1/4 tsp
  • dry bread crumbs - 1 c
  • Parmesan
  • peeled eggplant - 1 item
  • pepper and cayenne - 1/8 tsp

How to make oven-fried eggplant:

Heat oven to 375°. Slice eggplant in 1/2-inch slices. Beat egg. In bowl (flat bottom), combine crumbs and seasonings. Dip slices in egg, then in crumb mixture. Place on preheated cookie sheet that has been greased with 1 tablespoon Crisco. Continue coating slices and adding to hot cookie sheet. Bake 15 minutes, turn over and bake 15 more minutes.
