Celebration potato salad
Ingredients/Components
- sour cream - 1/3 c
- salt - 1/2 tsp
- vinegar - 3 Tbsp
- mustard - 1 Tbsp
- mayonnaise - 1/3 c
- fresh parsley - 1/4 c
- green onions - 2 item
- hard-boiled eggs - 2 item
- boiling salted water - 1 item
- jar pimentos, drained - 1 oz
- red potatoes about 6 medium size - 2 lb
- Greek pepperoni peppers - 1/3 c
How to make celebration potato salad:
Cook potatoes in boiling salted water until done. Drain and cool. Refrigerate until called for. Chop next 5 ingredients and combine with mayonnaise, sour cream, vinegar, mustard and salt; mix well. Cut potatoes into 1/2-inch cubes. Add potatoes to mixture and stir gently until well mixed. Cover and chill at least 1 hour before serving.Recipe categories: Low protein, Low calorie, Salads.
