Oven-fried eggplant
Ingredients/Components
- grated Parmesan cheese - 1/3 c
- fine dry bread crumbs - 1/3 c
- minced onion - 1 Tbsp
- nonfat mayonnaise - 1/2 c
- dried Italian seasoning - 1/2 tsp
How to make oven-fried eggplant:
Combine first 2 ingredients. Stir well. Spread evenly over both sides of eggplant slices. Combine bread crumbs, cheese and Italian seasoning in a shallow bowl. Dredge eggplant in bread crumb mixture. Place eggplant on a baking sheet sprayed with vegetable cooking spray. Bake at 425° for 12 minutes. Turn eggplant over and bake 12 minutes or until golden.
