Ingredients/Components
- salt - 1/4 tsp
- pepper - 1/4 tsp
- grated Parmesan cheese - 1 Tbsp
- mayonnaise - 1/4 c
- dry bread crumbs - 1/3 c
- eggplant
- garnish with fresh basil or parsley - 1 item
How to make oven-fried eggplant:
Combine first 4 ingredients in a shallow dish. Peel eggplant and cut into 1/4-inch slices. Spread both sides of eggplant with mayonnaise and dredge in bread crumb mixture. Place on lightly greased sheet. Bake at 400° for 10 to 12 minutes.Recipe categories: Low calorie, Side dish, Vegetables.
