Vegetarian chili
Ingredients/Components
- dried kidney beans - 1 c
- water - 3 c
- vegetable oil - 1 Tbsp
- chopped onion - 2 c
- green pepper, chopped - 1 item
- sliced mushrooms - 2 c
- thinly sliced carrots - 1 c
- fresh or canned unsalted tomatoes, chopped - 2 c
- can unsalted tomato paste - 1 oz
- chili powder - 2 Tbsp
- vinegar - 1 Tbsp
- minced garlic - 1 2
- oregano - 1 tsp
- cumin - 1 tsp
- black pepper - 1/4 tsp
- bay leaf - 1 item
How to make vegetarian chili:
Place beans in 3 cups water in saucepan. Bring to a boil; cook 2 minutes. Do not drain; set aside for 1 hour. Return beans to heat, adding water to cover if necessary. Simmer for 1 hour or until beans are tender. Drain and set aside. Heat the oiRecipe categories: Main dish, Beans, Chili.
