  • water - 3 c
  • vegetable oil - 1 Tbsp
  • chopped onion - 2 c
  • green pepper, chopped - 1 item
  • sliced mushrooms - 2 c
  • thinly sliced carrots - 1 c
  • fresh or canned unsalted tomatoes, chopped - 2 c
  • can unsalted tomato paste - 1 oz
  • chili powder - 2 Tbsp
  • vinegar - 1 Tbsp
  • minced garlic - 1 2
  • oregano - 1 tsp
  • cumin - 1 tsp
  • black pepper - 1/4 tsp
  • bay leaf - 1 item
