Italian wedding soup
Ingredients/Components
- water - 3 qt
- pepper - 1/2 tsp
- grated Parmesan cheese - 1 item
- parsley - 1 Tbsp
- salt to taste - 1 item
- chicken breasts, skinned - 4 item
- medium chopped onion - 1 item
- celery, diced - 1/2 c
- carrots, diced - 1 c
- frozen spinach - 1 pkg
- acini de pepe, cooked - 3/4 c
- small can mashed tomatoes - 1 item
How to make italian wedding soup:
Wash chicken; place in large pot with water and boil. Remove foam that forms. Add salt, pepper, onion, celery and carrots. Cook 2 hours or until meat is tender. Remove chicken and shred. Add spinach and already cooked pasta. Add shredded chicken and tomatoes. Cook 1/2 hour longer. More water may be added if necessary.
