  • water - 3 qt
  • pepper - 1/2 tsp
  • grated Parmesan cheese - 1 item
  • parsley - 1 Tbsp
  • salt to taste - 1 item
  • chicken breasts, skinned - 4 item
  • medium chopped onion - 1 item
  • celery, diced - 1/2 c
  • carrots, diced - 1 c
  • frozen spinach - 1 pkg
  • acini de pepe, cooked - 3/4 c
  • small can mashed tomatoes - 1 item

How to make italian wedding soup:

Wash chicken; place in large pot with water and boil. Remove foam that forms. Add salt, pepper, onion, celery and carrots. Cook 2 hours or until meat is tender. Remove chicken and shred. Add spinach and already cooked pasta. Add shredded chicken and tomatoes. Cook 1/2 hour longer. More water may be added if necessary. Add cheese, garnish with parsley and serve while hot.
