  • cornstarch - 1 Tbsp
  • cold water - 1 Tbsp
  • boiling water - 1 c
  • egg - 1 item
  • envelopes unflavored gelatin - 2 item
  • sliced fresh strawberries or frozen, thawed and drained - 2 c
  • plain, low-fat yogurt - 1 c
  • packets Equal sweetener NutraSweet - 8 item

How to make strawberry mousse:

Combine egg, gelatin, cornstarch and cold water. Stir to blend. Add boiling water. Blend thoroughly. Puree strawberries. Add gelatin mixture. Add yogurt and Equal; blend until mixture is smooth. Chill overnight or until set, about 4 hours. Blend again. Pour into dessert dishes and serve. Makes 8 servings, 1/2 cup each. Contains 57 calories per serving. Diabetic exchange: 1/2 nonfat milk and 1/4 fruit.
