Strawberry mousse
Ingredients/Components
- cornstarch - 1 Tbsp
- cold water - 1 Tbsp
- boiling water - 1 c
- egg - 1 item
- envelopes unflavored gelatin - 2 item
- sliced fresh strawberries or frozen, thawed and drained - 2 c
- plain, low-fat yogurt - 1 c
- packets Equal sweetener NutraSweet - 8 item
How to make strawberry mousse:
Combine egg, gelatin, cornstarch and cold water. Stir to blend. Add boiling water. Blend thoroughly. Puree strawberries. Add gelatin mixture. Add yogurt and Equal; blend until mixture is smooth. Chill overnight or until set, about 4 hours. Blend again. Pour into dessert dishes and serve. Makes 8 servings, 1/2 cup each. Contains 57 calories per serving.
