Ingredients/Components

  • sour cream - 1 c
  • salt - 3/4 tsp
  • flour - 1/4 c
  • butter - 2 Tbsp
  • chopped onion - 1 c
  • chicken broth
  • chopped green pepper - 1/2 c
  • shredded Monterey Jack cheese
  • ground coriander - 1 tsp
  • can green chili peppers, drained - 4 oz
  • dozen burrito flour tortillas - 1 item
  • cooked, shredded turkey or chicken - 2 c

How to make chicken or turkey enchiladas:

Cook chicken and debone. Save chicken broth. In large saucepan, saute onion, green pepper and 2 tablespoons butter. Add chopped chicken and green chilies and set mixture aside. In large saucepan, combine 3 tablespoons butter, flour, coriander, salt and chicken broth. Stir until thickened. Add sour cream and 1/2 cup of cheese. Combine 1/2 cup of sauce mixture into the chicken mixture. Roll each tortilla with chicken mixture and 1 tablespoon of sauce and place in large baking dish. When rolling of tortillas is complete, sprinkle remaining cheese and then remaining sauce on top. Bake at 350° for 25 minutes.
