Pumpkin soup
Ingredients/Components
- butter - 1/4 c
- chopped onion - 1 item
- clove garlic - 1 item
- curry powder - 1 tsp
- salt - 1/2 tsp
- ground coriander - 1/8 tsp
- crushed red pepper - 1/8 tsp
- chicken broth - 3 c
- solid pack pumpkin 16 oz
- half and half - 1 c
- sour cream - 1 item
- chives - 1 item
How to make pumpkin soup:
In large saucepan, melt butter; saute onion and garlic until soft. Add seasonings and cook 1 minute. Add broth; boil gently, uncovered, for 15 to 20 minutes. Stir in pumpkin and half and half. Cook 5 minutes. Pour into blender. Cover and blend until creamy. Serve warm or reheat to desired temperature.
