Ingredients/Components
- sugar - 1 tsp
- eggs - 2 item
- salt - 1 tsp
- flour - 1 item
- cornstarch - 2 Tbsp
- cold water - 1/4 c
- oil - 1 item
- vinegar - 1 Tbsp
- pepper - 1 item
- garlic salt - 1/2 tsp
- soy sauce - 1 Tbsp
- cashews - 1/2 c
- chopped green onion tops - 1/4 c
- whole chicken breasts, skinned and cut into small pieces - 2 item
- Add 1/2 teaspoon garlic salt
How to make cashew chicken:
Marinate first 5 ingredients for 30 minutes, covered, in the refrigerator. Add 1/2 teaspoon garlic salt. Beat 2 eggs in a bowl; place flour in another bowl. Dip chicken pieces first in egg, then in flour. Fry in hot oil until golden brown. Place in an ovenproof dish. Add 1/2 cup cashews and 1/4 cup green onion tops. Keep warm in a 250° oven while making sauce.Sauce:1 c. rich chicken broth salt pepper2 tsp. soy sauce1/2 tsp. sugar1/4 c. cold water2 Tbsp. cornstarch Put the chicken broth in a saucepan; season with salt, pepper, sugar and soy sauce. Bring to a boil and add the cornstarch which has been dissolved in the cold water. Cook until thickened, stirring constantly.
