Chicken and dumplings
Ingredients/Components
- flour - 2 c
- egg, beaten - 1 item
- hot chicken broth - 1 c
- salted water - 1 item
- stewing hen - 1 item
How to make chicken and dumplings:
Simmer hen until tender in salted water. Remove meat from broth and debone. Put meat in pan and keep warm while making dumplings.Put 2 cups flour in a large mixing bowl. Make a well in the flour. Pour into well, 1 cup hot chicken broth, mixing with a fork as you pour. Stir egg into flour broth mixture. As soon as dough becomes difficult to stir with a fork, work with fingers until smooth and stiff, adding flour if needed. Knead the dough for a few seconds on a floured board. Divide into 4 or 5 parts. Roll thin and cut into strips 2 inches wide. Break these into 2-inch long pieces and drop into boiling broth. Cook 10 to 15 minutes; add chicken and serve.
