Chicken and rice casserole
Ingredients/Components
- lemon juice - 1 Tbsp
- chopped celery - 1/2 c
- soft bread crumbs - 1/4 c
- can cream of mushroom soup - 1 3/4
- small onion, chopped - 1 item
- hard-cooked eggs, chopped - 2 item
- cooked rice - 1 c
- reduced calorie mayonnaise - 1/4 c
- diced, cooked chicken no skin
- dry butter substitute - 1 Tbsp
How to make chicken and rice casserole:
Combine eggs, soup, onion, chicken, rice, celery, mayonnaise and lemon juice, stirring well. Spoon mixture into nonstick 2-quart casserole. Combine bread crumbs and butter substitute; sprinkle over top of casserole. Bake at 350°, uncovered, for 40 to 45 minutes or until bubbly.Recipe categories: Chicken, Main dish, Casseroles.
