Ingredients/Components
- salt - 1/4 tsp
- water
- baking powder - 1 tsp
- shortening - 3 Tbsp
- all-purpose flour
- skim milk - 1/4 c
- onion - 1/4 c
How to make chicken and dumplings:
Dumplings:1 c. all-purpose flour1 tsp. baking powder1/2 tsp. salt3 Tbsp. shortening1/4 c. skim milk Disjoint chicken and remove skin; place in large pan. Add water, salt, onion and celery; simmer 1 to 2 hours or until meat is tender. Remove from bone; return chicken to chicken stock. Bring chicken stock to a boil; add dumplings. Cover and boil gently 8 to 10 minutes.Dumplings: Combine flour, baking powder and salt. Cut in shortening. Add milk and make a stiff dough. Roll dough out to about 1/8-inch thickness. Cut into 1-inch strips or squares.
Yields 6 servings; 3/4 cup serving may be exchanged for 2 medium fat meat and 1 starch.
