How to make beef and bean enchiladas:

In frypan, saute ground beef and onion until beef is brown; drain well. Stir in beans and taco seasoning; mix well with meat mixture. Add taco sauce; heat until bubbly. Reduce heat and simmer. Heat enchilada sauce in microwave or saucepan on low heat. Heat tortillas according to package directions. Pour 1/2 of enchilada sauce into oblong glass baking dish. Place 1/3 cup ground beef mixture into warmed tortilla; roll and place, seam side down, in sauce-filled baking dish. Place filled tortillas, side by side, until dish is filled. Pour remaining sauce evenly over tortillas. Cover with cheese.

Bake, uncovered, in a 350° oven for 15 to 20 minutes, or cover and refrigerate 1 day and bake for 45 minutes. Garnish with olive and green pepper slices. Top serving with sour cream, if desired. Serve with a green salad. Serves 6.
